The grapes for this lovely Cava come from the famed "Vinya dels Fossils" vineyard, which is situated 50 km to the West of Barcelona. Made from a blend of 50% Xarel-lo, 40% Macabeo, and 10% Parellada, this wine is round and approachable. It matured for an average of 36 months in contact with the lees. Enjoy aromas and flavors of bread dough, ripe golden apple, spice and fennel. Full-bodied and unmistakebly Cava, it is great before a meal, with Tapas such as roasted almonds, but it also drinks very well with a main course such as Paella.
"Zesty mineral and orange zest flourishes brighten musky pear skin, peach pit, chamomile and brown butter aromas. Full, fleshy and emphatically dry, with sappy citrus and orchard fruit flavors that are accented by fennel, toasted nuts and chalky mineral notes. Walks a fine line between richness and delicacy, finishing extremely long and emphatically stony. This bottling is consistently one of Spain's finest and most complex sparkling wines - and this year's release is no exception. It's one of greatest bubbly values in the world, too." 92 points Josh Raynolds Vinous (formerly IWC).
