The Sierra Morena Palido from Gomez Nevado is a unique treat in Spanish wine. This hails from the hills northwest of Cordoba from a region that has almost disappeared from the modern wine lexicon. This has much in common with a fino sherry, but there are several distinct differences. First this is actually a blend of Palomino, Pedro Ximenez and Airen. It is grown organically and in fact Gomez Nevado was the first certified organic grower in Spain. This spends roughly 5 years in a solera before being bottled straight from the barrel without any filteration, so it is a true "en rama". And Gomez Nevado continues to label his wine as they would traditionally calling it "Palido" which literally means pale. If you're a fan of dry fino, I highly recommend trying this little gem. Serve as you would a fino, chilled and with a fine array little tapas.
