The most famous of all Spanish cheeses - all sheep's milk, aged 9 months, from the D.O. of La Mancha. Not too young and mild, not super-aged and extra sharp. For most folks it's just right. Each piece is cut to weigh approximately a half pound and then vacuum sealed. We do our best to provide the closest weight possible.

PLEASE NOTE: This item is perishable and must be keep cool during shipping. We ship perishable items with frozen gel packs, paper, and bubble wrap, which will keep them stable for a maximum of 3 days.

As we ship from California, if you are east of New Mexico, UPS Ground will take more than 3 days to arrive. We strongly recommend that you select either UPS 3-Day Select, 2nd-Day Air, or Next Day for this and other perishable items in order to ensure that they arrive in good condition.
