Lovingly tended to across Navarra, sprouting asparagus plants are covered in mounds of soil, protecting the growing spears from sunlight, keeping them a pale white. Jarred white asparagus is incredibly tender and delicate. Serve simply, draped on top of a salad, or even solo on a plate, dressed with a vinaigrette or creamy home-made mayo.
