When Americans think of "Spanish" cooking they tend to conjure images of tapas and paella. But ask a Spaniard what food they miss when they think of home and they may just say their grandma's cocido de garbanzos, or garbanzo stew.
You will be amazed at how much these little pedrosillano garbanzos will absorb and grow. They are wonderfully full-flavored. Fabulous in a cocido of course, but they also make delicious, earthy hummus and toothsome falafels as well.
