One of the "ancient" cheeses from Spain, this cheese has a long history and the milk and aging process has changed very little in hundreds of years. Made with 100% raw sheep's milk, and lightly smoked with natural woods in caves, or tepees. No liquid smoke or artificial anything. A truly brilliant cheese. The flavor is rich and meaty, the smoke is light and pleasant. This is a great alternative or cheese to try if you are a fan of Manchego, but want to venture out and try other cheeses from Spain.

Price is per 1/2 lbs piece. The price will vary slightly. We try to select pieces as close to 1/2 a pound as possible.

PLEASE NOTE: This item is perishable and must be keep cool during shipping. We ship perishable items with frozen gel packs, paper, and bubble wrap, which will keep them stable for a maximum of 3 days.
