The 2007 Mas del Serral is the first release of this single vineyard sparkling that comes from a northwest facing vineyard planted in 1954 and farmed organically. It is truly something special. A blend of Xarello and Bastarda Negre aged on the lees for over 8 years. It's long and focused with superb acidity and precision for a wine sparkling wine this old. Flavors of green apple, melon, white flowers and a hint of petrol and brioche. Pretty amazing stuff. Only 2735 bottles produced and less than 100 bottles came to the US.
Pepe Raventos at Raventos I Blanc has been a leader in biodynamic / organic viticulture in Penedes, the area that most Cava comes from. He actually has left the DO of Cava and is trying to start a new DO in the Arnoia River valley. The sparkling wines he produces are superb and they have become some of our top selling sparkling wines in the store.
