Hidalgo Pastrana Manzanilla Pasada Sherry

The Pastrana Manzanilla Pasada is unique in several ways. First and foremost it is the result of grapes from a single vineyard that has been owned by the Hidalgo family since the 1700's that is located between Jerez and Sanlucar. Second it is aged about 12 years, which is 7 to 8 more than a typical Manzanilla. It is is only lightly filtered, which keeps the color a bit darker and the flavors noticeably richer than it's younger sybling, La Gitana. Javier Hidalgo told us that this Manzanilla is the type of Manzanilla that was common in his grandfathers time. All of the trademark flavors of sea spray from the waves, a bit of nuttiness and a hint of green olive, but deeper and more assertive than a lighter manzanilla. This is an eye opening and palate appreciating take on Manzanilla. We have one in the fridge at all times, because one never knows when a plate of fresh shrimp may befall you.
