- Barbadillo is one of the best known and largest producers in Sanlucar de Barrameda. Their Principe de Barbadillo Amontillado comes from an old solera and is a classic, bone dry amontillado. Pungent and lengthy with notes of salted almonds, lemon zest and toffee. Almost stinging acidity brings this to a razor sharp finish and goes perfectly with dried, older cheeses.
