well-known for its culinary traditions. One of the top guava-producing regions
in the world, the Calvillo area is also known for its hibiscus flowers and
quince. This lovely dense fig jam is full of the pears-and-apples-and-vanilla
notes typical of the natural fruit, even though the only ingredients in the jar are
quince, sugar, and lemon juice. The texture is more spreadable than a typical
