Made with juice from Catalonia's sweet Lleida apples rather than wine, this vinegar has a gentler acidity than most (just 5%). Very fragrant and "apple-y", it's a dream in salads. Try it in a spinach or Waldorf salad and wow yourself. Chicken or bacon in your salad? Even better. Drizzle it over blue cheese or smoked idiazabal on a cheese plate.
