It all begins with Alvear's beautiful sherry-style Montilla wines. Made exclusively with the Pedro Ximenez grape, the wines, and thus the vinegars, have tremendous depth of flavor. 10 years of careful solera barrel-aging makes this vinegar even more special. This version is full of the typical nutty sherry notes, with a gentle caramel sweetness to it as well. Definitely a much lighter touch than the more familiar "balsamic" style, the combination of flavors make it an inspiring addition to dressings and marinades.
