Dominio do Bibei is making some of Spain's finest and most elegant wines. An ambitious project that is certainly paying off, Bibei follows the ideas of biodynamic viticulture to obtain the purest expression of the region's terroir. All harvesting is done by hand and only indigenous yeasts are used in fermentation. Wine is moved by gravity with the underground temperatures providing natural refrigeration. Stainless steel tanks are not welcome here, with wood or cement being the fermentation and storage vehicles of choice. The is a supple and spicy blend of 90% Mencia with a little Garnacha and the less-known Mouraton, Souson and Brancellao. Heavenly scented, Lalama offers a palate soaked with crispness and flowers, raspberry fruit and a jolt of pungent mineral flavor backed up by Asian spice notes. Unfined, unfiltered and unrestrained, this is one great wine from one of Galicia's most exciting producers.

Past vintages of this wine have been rated 90-93 points by Robert Parker.  No ratings are out for this vintage yet.  Our staff tasted it and think it's a bit lighter and more reserved than the stellar 2018 was, but it still reflects the same cinnamon and warm spice notes and is actually a better pairing with many lighter fare foods.  Think robust Pinot if you are not familiar with this Mencia blend.
