El Reflejo is made mainly from 65-year old Bobal vines grown near the Jucar River. The majority of their vineyards are Bobal, but indigenous varieties including Pardilla, Malvasia, Moravia Agria, Moravia Dulce, and Rojal also grow among the Bobal vines. These white varieties increase the fruit character at the same time as they decrease the tannins, achieving depth of character, balance, and finesse in the wine. Offering aromas of black plums, bramble berries and dark chocolate, the palate opens on cranberry, followed by darker berry flavors, backed by notes of salted caramel, coffee bean, and dried Mediterranean herbs. The tannins are friendly; they make their presence known, then soften and peel away into an orange-splashed finish. This is a mind-boggling expression of Bobal – fresh, layered, complex, concentrated, and savory. You’ll want this with cheese, chorizo, and grilled meats. — JL
