Jesus Fernendez de Castro's great grandfather bought a cortijo in Cordoba - a 1000 olive tree farm - in 1875, and installed a stone mill to produce oil for local sale. The old mill was in operation until 1956, but eventually dismantled to make way for more "modern" practices. Over time the family lost their direct connection to the land.
About twenty-five years ago, Jesus Fernendez de Castro and Transito Habas Sanchez, fresh out of college, decided to return to the land and reconnect. Taking over the original property, then acquiring an additional 13,000 trees, they went to work to create a truly sustainable farm. Transito and Jesus now rely on a mix of traditional and modern technology, picking all of the olives by hand, using only captured rainwater, and installing solar panels.
Pressed from Nevadillo Blanco Olives, this oil is green-gold in color and fruity on the palate. It evokes flavors of green apple, almond, and freshly mown lawn. Absolutely wonderful on good crusty bread.
