This completely organic and certified biodynamic producer is one of Spain's most respected, and their wine is found in every Michelin-starred restaurant in the country. Located in the town of Sant Sadurni d'Anoia, on a very unassuming little street, the original caves are underneath the former home of Josep Mata Capellades, who founded the winery in 1924. Today Recaredo is led by the third generation of the family, still in the same location, though the facility now spreads underground to the other side of the street as well.
And the family is still doing things the old way: using only their own estate-grown fruit, hand-turning the bottles as they age, even disgorging by hand without freezing the bottle necks - an almost unheard-of practice these days. Their dedication to quality is absolute. Recaredo only produces Brut Nature (no sugar added), single vintage Cava, and every single bottle carries the vintage, the disgorgement date and the time the wine has been in bottle in contact with the lees.
This is a beautiful, bone-dry cava, with the finest of bubbles. The richness of the yeast is balanced by precision and focused notes of almond, apple, and citrus. Truly an exceptional value.
