From Urfa, in southeastern Turkey. Red peppers are sundried during the day, tightly bundled at night, then dried in the sun again. The process is repeated for 1-2 weeks, "curing" the peppers and intensifying their flavor. Wonderfully complex smoky-coffee-raisin qualities with a slow-building heat that can sneak up on you. Try Urfa in a marinade, in a creamy yogurt dressing, or in your next batch of burgers.
