Halloumi is a shepherd's cheese most associate with Cyprus but it found in throughout the Eastern Mediterranean. It's a firm, sheeps milk cheese that in Cyprus is eaten at every meal. Breakfast with tomatoes and eggs or later with olives, chilis, olive oil and bread.
You can eat it either fresh or grilled as it doesn't melt. A firm, cheese that holds its shape when heated so it gives you a completely different texture than you would expect. Often served sliced thinly and grilled on both sides to lightly brown. A warm addition to a salad or great on it's own with some zatar sprinkled on top and followed with a generous drizzle of good olive oil.
