This is a rare and locally made product:  olio nuovo.  Olio nuovo is freshly pressed, not-yet-settled olive oil literally fresh out of the press. It is only available for a few months after harvest as the solids in it settle (and the oil above the solids become extra virgin olive oil).  This was sourced by us from Old Chatham Ranch, where the olives grow in the sun high above the headwaters of the Russian River.
