The Cornicabra variety is typically used for olive oil production, but locally, in the regions where it's grown, it's also a popular table olive. These have been picked semi-ripe, producing a beautiful color range from pale pink to dark purple. The cornicabra is oval-shaped with a small point on one side, which gives the name to this variety: Corni-cabra meaning "the goat's horn". HAVE PITS.
