The pulp of the sun-dried Choricero pepper is not a sauce, it is a spice to be used as an ingredient for cooking. It's sweet and deep, like pimenton (paprika), but in a fresh form. Sun-dried, not smoked. It's mostly used as an ingredient in sauces, or added to beans, meats, soups and other dishes. It is also the base for any sauce with "a la Vizcaina" in the name, such as "bacalao a la Vizcaina" - one of Spain's most traditional dishes.
