The Cantabrian town of Santona on Spain's north coast is regarded as the main port in the region for coastal fishing. Its tradition for making high-quality anchovy fillets, which employs most of the population, has resulted in this town being called the "Cradle of the Anchovy". All of Pujado-Solano's anchovies are great, but these are their Extra Super-Duper Top Grade. They're big and beautiful - only 10 to 12 in the tin. These aren't anchovies to casually toss in a salad or a pasta dish. These deserve to be the stars of the show.
