Have you ever seen a big, gorgeous, golden paella that made you hungry just to look at it? The thing is, saffron is much more than a way to color rice - it's a powerfully aromatic spice. So to get a vivid yellow color in a big paella you'd have to use alot of saffron, which could really change the balance of flavors in your dish. (Not to mention cost a fortune!)
What to do? Use a little colorante to intensify the color without changing the flavor. It's an age-old secret. We won't tell.
